Research Scientist at Faunalytics. I obtained my PhD in animal welfare science from the University of Guelph.
What a great workshop to teach people about the welfare of chickens and fishes! You may have already included some resources from Faunalytics in your workshop, but in case not, our resource 'Global Animal Slaughter Statistics' provides data on the number of chickens and fishes slaughtered worldwide and by country. Also, our original study on chickens and fishes investigated public beliefs about these species and whether these beliefs were associated with pro-animal behaviors such as signing a petition for improved welfare or taking a diet pledge to reduce one’s consumption of chickens or fishes. We hope these resources are useful for your workshop. If you have any questions about our resources, don't hesitate to contact us, we are here to help.
I would suggest reading more on the validity of mice models, particularly for Alzheimer's, and their failure to translate to the human condition: https://brill.com/view/book/edcoll/9789004391192/BP000025.xml
