What are some effective/impactful charities in the domain of human rights and anti-authoritarianism that I can donate to? How effective are organisations like Amnesty, really? Thanks :)

I wish there were more answers to this question. This post makes a very good argument for why we should be excited about being able to point out effective charities in this area.

Hmm, I'm not sure I understand the relationship between economic growth and improving human rights. (Well, authoritarian regimes tend to lower growth, but do you think that this seems like the best way to increase economic growth?)

Open Philanthropy does extensive giving in certain areas related to human rights, like criminal justice reform and immigration policy. You may want to examine their grants in those areas.
